Ingredients

  • 300g self-raising flour, plus extra for dusting
  • 200g mature Cheddar, grated
  • 250g low-fat natural yoghurt

Method

  1. Mix your dough: Combine the self-raising flour with 150g of the grated cheese in a large bowl. Next, fold in the low-fat natural yoghurt until everything comes together.
  2. Shape and cut: Turn the dough out onto a lightly floured work surface and knead a few times gently until smooth. Shape into a round, then roll out with a lightly floured rolling pin to a thickness of 2cm. Cut out 10 scones using a 6cm round cutter, re-rolling any trimmings as necessary.
  3. Bake to perfection: Place onto a lined baking tray and sprinkle the scones with the remaining 50g of grated mature Cheddar. Bake at 200°C/180°C Fan for 18 minutes, or until the scones are light golden and springy to the touch.

Serving suggestions

Move to a wire rack to cool slightly, then serve as is, or split and spread with butter or fill as you prefer. The beauty of this recipe lies in how easy it is to customise with extra bits from your fridge.
