Birmingham chef Glynn Purnell's latest restaurant, Trillium, has been added to the prestigious Michelin Guide just five months after its opening. The venue was included in the May round-up by Michelin Inspectors, which also featured establishments in London, Cardiff, and the villages of Harberton and Northington.
Trillium's Journey to Michelin Recognition
Purnell opened Trillium in the former North Brewery location following the closure of his eponymous restaurant, which previously held a Michelin Star. The modern British restaurant is described as 'vibrant and laid back' and is a collaboration with Phil Innes, owner of Loki Wines. The drinks menu received high praise from the inspectors.
The Michelin Guide states: "Chef Glynn Purnell brings all of his experience to bear on this restaurant in a newer part of the city surrounded by gleaming skyscrapers. The fluid menu is overflowing with appealing snacks, small plates and sharing platters, starting with the signature Trillium milk loaf with malt vinegar and chicken fat, followed by the likes of juicy Tamworth pork chop with a light salsa verde and full-toned manchego. The well-versed team are happy to make recommendations, while the impressive wine list offers variety and depth of quality."

First, because it's rather lovely to be listed alongside such good company. And second, because it tells us we might just be doing a few things right! Glynn Purnell also owns Plates by Purnells on Edmund Street, which was added to the Michelin Guide in June 2023 but is no longer listed.
