Birmingham's culinary scene shows no signs of slowing down as 2025 draws to a close, with several highly anticipated restaurants and cafes preparing to open their doors in the city centre.

Despite numerous successful openings throughout the year, including popular chains like Dave's Hot Chicken and Popeyes, along with sophisticated venues such as Cylla and Regina's Bar and Restaurant, the city's food landscape continues to evolve with exciting new additions.

Grand Central's New Arrivals

Two notable establishments are set to launch at Grand Central shopping centre this November. Black Sheep Coffee will occupy the unit previously home to Costa, which closed in September. This represents a positive development for the shopping centre, which has experienced several closures during its tenth anniversary year.

Joining Black Sheep Coffee in the food court will be Tonkotsu, a beloved ramen bar taking over the former Giraffe location. Following the successful opening of Pizza Pilgrims, this addition further strengthens Grand Central's dining offerings. The new standalone Tonkotsu location is scheduled to open before Christmas.

Innovative Vegan Dining and Potential Michelin Recognition

Fleet Street will welcome OMNOM, an innovative Indian vegan restaurant opening this November. The 150-cover venue will uniquely combine dining with a yoga and meditation studio, providing a significant boost to Birmingham's plant-based dining scene where all-vegan restaurants remain scarce.

The most anticipated opening, however, is Trillium at Snow Hill Queensway, scheduled to launch on Wednesday, December 10. Created through a collaboration between renowned chef Glynn Purnell and Phil Innes from Loki wine, with culinary direction from Rob Palmer (the creative force behind Toffs), this restaurant has generated significant buzz. Industry experts suggest Trillium represents Birmingham's strongest contender for Michelin star recognition among 2025's new openings.
